This started as a recipe with pasta so if you want you can substitute pasta for the squash...but the squash is healthier for you and if you go with the squash you can have two helpings and not feel guilty! This is pure gluten free comfort food! Ohhhh yeah!!!!
First start by preparing and cooking one spaghetti squash in the microwave (see my recipe for best way to cook and prepare spaghetti squash, spaghetti squash)
Quick Meat Sauce...
1 cooked spaghetti squash, medium size, seeded and shredded
9 cups your favorite meat sauce
2 cups whole milk ricotta cheese
3 cups Italian blend shredded cheese
Preheat oven to 350 degrees. Prepare and cook one spaghetti squash in the microwave (see my recipe for best way to cook spaghetti squash). In the meantime, prepare your favorite meat sauce (reference my Quick Meat Sauce recipe). Next, take your favorite lasagna pan and layer the bottom with the cooked spaghetti squash.
Next, ladle about 8-9 cups of the meat sauce on top of the squash layer. Add about 8 dollops of whole milk ricotta (about 2 cups) evenly over the top of the meat sauce. Blanket the top with 2-3 cups of Italian blend shredded cheese. Bake in 350 degree oven for 45 minutes or until top is golden brown. Enjoy!!!
