Pasta Fagiole

It's been tooooo long since my last post!  Without going into too many details, let's just say Mercury was in Retrograde (for all you astrology freaks) and it got the better of me for far too long!  Now I'm back baby!  What better way to come back then with some good old fashioned comfort food.  I loves me some homemade soup!!!  In fact, nothing in a can even comes close!  We recently had a potluck at work that was soup oriented and my good friend Chris Ground brought in his Pasta Fagiole soup which I quickly devoured, in fact,  2 gigantic bowls to be exact!  I begged and pleaded for the recipe and he kindly conceded.  So please find following Chris' delicious comforting soup with a few small tweaks.  If you make it once, which I hope you do, it will quickly become a staple in your weeknight repertoire!  Enjoy!

Pappardelle alla Bolognese

As I mentioned in my profile, I am an Italian wannabe and my favorite thing to cook is Italian food.  Is it any surprise then that my youngest son, Benjamin's, deemed my "mini-me", favorite dish is also one of his favorite Italian words to say?  He particularly loves ordering it at restaurants and has the perfect inflection when he does..."Pappardelle alla Bolognese por favore"....(insert tears in my eyes of a proud Pappa).  Ok, enough of why I had to make this and on to making it!!!!

Lemon Ricotta Pancakes

Happy Mother's Day!  If you want to make something for your favorite Mother in your life, or if you want to make the perfect breakfast that will make anyone call you Daddy, this is the dish for you!  Lemon Ricotta Pancakes.  No three words have ever sounded or tasted better!  My wife Samantha and I first had these at the Shutters on the Beach hotel in Santa Monica and have drooled over them ever since!  Hands down, these are the specialty pancakes Samantha asks for whenever there is a special occasion breakfast coming up.

Mexican Quinoa Salad

It helps to have friends in all the right places!  For me, that is my friend Anamaria.  Anamaria was born in Peru and visits her family as much as possible and always has such great stories to tell from her travels.  Whenever she goes back I ask her to post pictures of the amazing cuisine and landscapes from her travels.  I'm grateful that she often sends me a little treat from her trips to have a "taste" of her native Peru when she comes back.  Usually, it's the coffee chocolates that are to die for and that I hide from my kids.  This time, she sent me that as well as a bag full of Black Quinoa!  Black is her favorite and it is quickly becoming mine!  I knew I wanted to make a latin infused salad with it but wasn't quite sure about the combination until today.  Check it out, I will definitely be making this again and again!  And it keeps my wife Samantha's personal trainer happy too because it's healthy!

Chipotle Chicken, Bacon and Corn Chowda

Yes, I'm giving this divine bowl of heaven a name with a Boston accent because it contains all the goodness of home!  Welcome to my Chipotle Chicken, Bacon and Corn Chowda!

Cheese...good....Chicken....good....Corn....good....Bacon.....Damn good!

Last night was a chilly brisk night (ok, it was 65 degrees, but we live in California so that was brisk for us, go with it!) and therefore the perfect night for soup!  I wanted something warm and stew like that has all the comfort food feeling to it but with a kick!  Ok, I'll tell you the version I made definitely has a kick!  While I'm an Italian wannabe, I think I must have some Mexican in me as well because this was definitely caliente!  I will give you the recipe as I made it with a less spicy option if you are serving those with a milder palate!  Either way, it is delicious!
